8. Maple Syrup comes in different grades
In collaboration with the Canadian Government, the USDA has developed new guidelines to grade maple syrup. The labels must specify the grade. The IMS suggested the new grading scheme to give consumers more clarity on maple syrup’s flavor and consistency.
Each maple syrup classification has sub-categories for flavor profiles and colour. Consumers are guaranteed the content of each bottle by a grading system that is usually seven levels deep.
The sap can change in color and taste throughout the year. Sap in the early season is a lighter color with a subtle flavor. Later in the season, syrup is darker and has a stronger flavor. The process is the same regardless of when the season begins. Grade A
The Grade A Dark Amber is richer and sweeter, whereas the Medium Amber is lighter. Maple syrup is no longer classified by Grade B.
