Raw cheese contains a lot of nutrients. Lacto-fermentation is a culturing method that begins with bacteria producing lactic acid. This breaks down lactose, casein and other proteins. Beneficial bacteria inactivate other putrefying forms of bacteria and preserve the cheese.
Lunchtime snacks are best served with a few slices of cheese raw on top of whole grain biscuits.
